Why this blog??

Why this blog?? I often find myself stressing over what to make for my family for dinner. We live a busy life and some meals need time to prep, cook and let's not forget shopping for everything you need. I love cookbooks and websites, but there are so many recipe's at times it is overwhelming. The recipe's I will be posting are things I actually made. I will tell you if they are easy or more time consuming. I will also tell you if they are good. Most of these are recipe's I have made for years and continue to make because they are easy or quick and my family loves them and i know yours will too! I will also try to at least once in a whlie try a new recipe I've found on line or in a book and honestly rate it. I always encourage others to send me their favorite recipe's as well! I am a mom... not a chef. But I am a mom who enjoys cooking for her family and making a somewhat healthy meal (some days more healthy than others:) ) In each recipe I will share how I recommend serving it, any substitutions I can think of that are also good, or ways to prepare ahead of time to make the cooking part seem quicker! I am not a photographer, as you can see... most of these pictures are taken from my phone camera, so may not be the best! Sauteed Brussel Sprouts with Pancetta


My mom always makes me Brussel sprouts with Pancetta and I LOVE them. It always seemed like to much effort for me to make them for just a weekday meal, especially since my husband won't eat them. I saw a posting on Skinnytaste.com for a recipe that looked similar to my moms, but it made it seem simple and easy. I went right to the store, bought the stuff and came home to make them along with dinner. I LOVED them!!! And better yet... both my kids loved them too which really surprised me!! Click here to see the Skinny Taste recipe. I changed it up a little... making it not so skinny:) Here is how I made mine...

* 1.5 lbs Brussel Sprouts- cleaned and shredded
* 4 oz pancetta- minced
* 1.5 T extra virgin olive oil
* 4 garlic cloves- minced
* Kosher salt and fresh grated black pepper to taste
* Fresh shaved Parmesan Cheese for topping (Or parmigiano-reggiano)



In a deep heavy saute pan, saute pancetta on medium heat until fat melts and pancetta becomes golden, about 5-7 minutes (I like mine crispy). Add olive oil and garlic and sauté until golden. Add shredded brussels sprouts, salt and pepper to taste and sauté on medium heat for about 10 minutes until tender crisp. Stir occationally. I like mine getting really caramelized and browned! Spoon into a bowl and top with fresh shaved parmesan cheese!


ENJOY!



Clean well... pull off outer darker green leaves, and use a sharp knife to shred 

Mince

Pan fry till crispy and golden

Add olive oil, garlic and brussel sprouts  and saute well


Add the parm cheese at the end.

YUM
